Preheat first, then time from the moment the food goes in
Most baking failures are timing failures in disguise: the dish went into an oven that was not yet at temperature, so the printed time was wrong from the start. The oven timer includes a preheat reminder for exactly this reason. Domestic ovens take 10 to 20 minutes to reach 180 °C and the light that goes out when the thermostat is satisfied is optimistic; the walls and shelves are still absorbing heat for several more minutes. Start the cooking timer only once the food is in, and if a recipe says "check at 25 minutes", set the timer for 25 and decide then.

Fan ovens run hotter for the same setting; reduce the dial by about 20 °C or the time by 10–15 %. Dark metal tins brown faster than glass or light tins. These are starting points; a thermometer beats a clock for meat and bread.
Timing several things in one oven
Work backwards from the moment you want to serve. Write down when each dish must go in (serve time minus its cooking time minus resting time), then set a timer for each entry point. Meat rests for 10–20 minutes after coming out, which is exactly the slot for finishing roast vegetables at a higher temperature. The cooking timer runs up to four named countdowns at once and is the right tool for a full roast; this page is the simpler one for a single dish plus its preheat.
